Ingredients:
6 cups peaches, pitted & rough chop
1 & 3/4 c. Light brown sugar
6 Tbls. Lemon juice
1/2 c. Bourbon
1 & 1/2 c. Sugar
2 tsp. Red pepper flakes
1/2 tsp. Salt
1 pkg. powdered pectin
Combine peaches in bowl with brown sugar, lemon juice and 1/4 c. Bourbon, let sit covered on counter overnight.
Next day pour peach mixture into wide pan and add remaining bourbon. Boil, cover, reduce heat and simmer for 15 min. Once chunks are translucent remove lid and add sugar, salt and pepper flakes. Increase heat, cook rapidly and stir until temp reaches 220 degrees. Add pectin and boil for 2 min. more. Take off heat, put in 8oz jars and process in water bath.
Serve over goat cheese with crackers
